By Geoffrey Cook Did you know that the turkey you thawed on the kitchen counter, instead of in the fridge, could now contain bacteria levels high enough to harm human life, even though you cant see, smell, or taste it? Theres nothing better than a home cooked meal during the holidays. But, with all the special effort that goes into making one, everything will be for naught if the food has not been stored, prepared, or cooked properly. Food experts agree that the safe handling of food should be the top ingredient in any recipe. While they may not turn you into a gourmet chef, following these simple food-handling tips will keep your family and guests safe from unpleasant, and sometimes life-threatening, food-born illnesses. When buying raw meat, keep juices, which may contain bacteria, from contaminating your hands or anything in your grocery cart. Plastic bags work great for this purpose. Meat should also be picked up at the end of your grocery shopping and should not be placed in the same bag as fruits and vegetable. If you plan on storing your meat for 2 to 3 months in the freezer, make sure you buy some freezer proof wrap. The wrap that the store uses is designed to allow air into the meat product and is, therefore, not good for freezing. This is because beef products turn from a purple color to a bright red when exposed to air, making them look fresh, but if left too long will promote bacteria growth. Defrosting should be done in the refrigerator or in a sink full of water, changing the water about every 45 minutes. A refrigerator allows the meat to defrost in a controlled atmosphere, slowing down the growth of bacteria. Never defrost your meat on top of the counter at room temperature. This can quickly become a bacteria breeding ground. The growth rate of bacteria multiplies rapidly between 40F (4C) and 140F (60C). Once meat has been thawed it must be either cooked immediately or placed in the refrigerator and then cooked within 24 hours. Never refreeze meat. Most meats and poultries only have a safe fridge life of 2 days, whether stored after thawing or purchased fresh. When handling raw meat, wash your hands before and after. Also, wash counters or plates you plan to reuse in the preparation process if they have had raw meat on them, as they will also contain harmful levels of bacteria. As humans, we also carry harmful organisms on our skin which, when spread to food, produce a toxin that normal cooking cannot destroy. Therefore, it is essential to wash our hands thoroughly with soap and water prior to handling food, as well as cover open cuts. While beefsteak can be cooked to varying degrees of redness, turkey must be completely cooked. At the innermost part of the thigh, the temperature must reach 180F (82C) for a stuffed turkey and 170F (77C) unstuffed. Stuffing in the cavity should read 165F (74C). Cooking times vary with the weight of the bird. It is important not to keep the thermometer inside the oven with the bird as it could be affected by the ovens hot air and provide a false reading. Plan your cooking ahead of time. Do not partially cook the bird, refrigerate, and then complete the cooking process, as this will produce dangerously high levels of bacteria. Cooked food must be refrigerated within 2 hours, which means that you need to plan your meal so that it can be eaten shortly after being cooked. Refrigerated leftovers should be eaten within a couple of days, which includes turkey gravy, fish, and eggs. Meat casseroles and pies, rice, potatoes, and cooked noodles will last 2 to 3 days, while cooked meat, chicken, turkey, turkey stuffing, and many soups may last up to 4 days before bacteria levels reach critical points. In this article let us take a glance at some of the more comical sides of the equation. There is an old clich that unfortunately is true. When it comes to losing weight, an older woman will have to choose between saving “her butt or her face.” This refers to the idea that if you lose too much weight your face may look more haggard and wrinkles may be emphasized. You could get rid of a double chin and end up with a flapping turkey neck instead. Jowls that have lost their pads of fat could hang and gaunter cheekbones could create a ghoulish or wolfish look on an older face. Eyes could appear more sunken and the skin could lose its dewy sense of tautness. Often older faces that have lost too much weight appear cadaverous or as if they are continually remembering the pain part of another old expression “no pain no gain.” The truth is that a fatter face often looks much younger than a gaunt face. The extra fat pockets plump out hollows in just the right places creating a youthful appearance. Wrinkles and expression lines such as crow’s feet are simply less noticeable and often the skin texture on a plumper woman is simply smoother and healthier looking. On the other hand, if you keep enough weight on you could end up with a rear end or thighs that are much larger than you originally desired. Notice that many older women with beautiful line free visages and gorgeous complexions usually tend to be apple shaped or pear shaped in their lower body. Although being thinner is healthier then being too fat, the best compromise is to be the healthiest weight for your age and body shape. Keep in mind too that the people that look the youngest, no matter what their weight, are those that are the happiest and not stressed out by things like calorie restricted diets, painful plastic surgery or even caring too much what other people think. Changes in older people’s physical, personal and financial capacities may contribute to their anxieties and in return, they may end up feeling sad, alone, empty and rejected. Depression in older individuals is caused by many factors including accumulated lifetime losses and medication. Lifetime losses usually include changes in the standard of living, housing and reduced income. These also include changes in relationships, the loss of a loved one or close family members and in instances where friends and family move away. Even the loss of a pet or important possession contributes to depression. Medication on the other hand is also a common cause of depression among older individuals. Older people oftentimes take a lot of medications such as sedatives, tranquilizers, high blood pressure medicines and anti-inflammatories, all of which can cause depression. Drug interactions can sometimes be dangerous and can produce depression, mental confusion and many other physical problems. If your older loved ones are showing signs of depression, you can help them by trying these strategies: A loving touch can perform miracles and for depressed individuals it can give them the assurance that they are cared for and loved. Show your affection, hug or offer back rubs. These maybe the simplest forms of showing how much you care but these will mean so much for depressed people. Communicate with your loved ones in a manner that shows respect and honors their dignity. The manner in which you express yourself and talk to older people can create a huge difference in how they will feel about themselves. Be considerate to the older person’s needs especially if there is physical barrier to communication. Face the person when talking to him or her and use short sentences as much as possible, especially if the person has hearing difficulty. Respect their preferences and routines. They may be old and dependent upon your help but they too have lifelong routines and patterns that they need to follow for a sense of continuity and that needs to be respected. The worst thing we do for our elderly loved ones is strip them of their dignity and control. In our desire to help them and make life easier for them, we tend to take over their lives and be in full control. Always bear in mind that overprotecting your older loved ones will only drive them to depression. No one likes to have his or her control and dignity taken away. Encourage them therefore to decide for themselves and always respect their privacy. Finally, let them continue to be involved with life’s activities. Being old doesn’t mean staying inactive and glued to their beds. Help them become involved in meaningful activities that will spark their interest and enthusiasm. Involve them in volunteer activities or get them into crafts or hobbies that will make them look forward to another day.
